And if only dogfights weren't just entirely turning fights... I've been playing War Thunder recently and it's quite clear dogfighting can be more than just that: rolling scissors, barell rolls etc.

And uhm, they aren't. I use a variety of tactics depending on what I'm in, and what my enemy is in. The only time a dogfight involves almost nothing but turning circles, is your classic stock F-16 duel to show who is the better dogfighter. G-forces in a dogfight will not change much, but they will make the fight slower.
