That's pretty similar to YSCamera - YSCamera is a custom aircraft with no visual model, or a video frame etc. You fly your "follow" aircraft, then run the camera script and it faces the camera toward the target aircraft. The problem is the shot can seem too artificial and it loses the flow of motion so I do like your idea of controlling the camera manually. Do you use the mouse set to the viewpoint then to manage this?

F7 with some zoom and a fixed camera angle. I try to keep the chase plane as solid as possible so that I can keep them in the center of the frame. Regardless, the clips are so short in the video that the planes never leave the frame and I won't have to track them. There was only one clip that the camera moves in the entire video and it was an accident that it made it into the final cut.
