Elevator/Aileron/Rudder Dead Zone?

I've been playing YsFlight for about 2 years now but...
What are they used for? I've turned them on and off between flights like crazy, but it doesn't seem to make any difference to me. Oh, and I also use a joystick, not a mouse. Does that make any difference?

A dead zone is for joysticks that are either really sensitive or have no resistance to movement:

If you have dead zone on, moving your flight stick a tiny bit in a direction won't do anything - this is handy for making your movements more accurate, but also slightly reduces your responsiveness.

So in that picture, you have Rudder Dead Zone activated - if you have a flight stick, or pedals, your rudders won't respond to tiny movements until you twist your stick or push a pedal past a certain point.
